Ingredients :
For the syrup (500 mL):
- 2 cups of water
- 1 cup cane sugar
- 1/2 cup pumpkin puree
- 4 cinnamon sticks
- 3 tsp ginger powder
- 10 whole black peppercorns
- 1 tsp nutmeg
- 1 tsp allspice
- 3 tsp vanilla extract
For the latte:
- 3 tsp homemade syrup
- 1 shot of espresso

Dam Oat Milk
Preparation :
- In a saucepan, roast the spices over low heat for 2 minutes.

Add water and increase heat to medium.
Reduce the mixture by half (about 20 to 30 minutes). - Stir in the pumpkin puree and mix well.
- Add the cane sugar and stir.
- Simmer for 10 minutes.
- Remove from heat and let cool. Sift in the whole spices.
- Add the vanilla extract and mix well.
- For the latte, prepare your Dam oat latte
- Add 3 tsp of homemade syrup to a shot of espresso, then pour in the oat milk.

Mix and enjoy.
Service :
Serve your latte hot, with a sprinkle of cinnamon on top.
